I kicked off the weekend with an 11 mile run and a boxing class at BoxUnion. This was my very last long run before my race next Saturday in San Fransisco! It’s insane how quickly these 12 weeks have gone by but I am sooo pumped to finish it out strong.
I’ll definitely do a recap of the race with all my tips and tricks I’ve learned along the way!
But my whole body hurts today so I’m taking the rest of the day niiiice and easy! Starting with sharing this BOMB almond butter protein cookies recipe with you. The babes at Tone It Up sent me some of their protein powder to try so I decided to get a little creative!
Lately I’ve had SUCH a sweet tooth but at the same time I’m trying to significantly cut back on my added sugar intake. It’s so easy to eat too much sugar if you aren’t actively paying attention to it!
So these protein cookies are the perfect combo of sweet and healthy. They are sugar free AND high in protein!
- 3/4 cup almond butter (unsalted & creamy works best)
- 2 egg whites
- 2 scoops of Tone It Up vanilla protein powder (you can totally use the chocolate too!)
- 3 tbsp coconut oil
- 2 tbsp of organic RAW honey (optional; I didn’t add any honey to my cookies)
Preheat the oven to 350ºF. Add the almond butter, egg whites, coconut oil, and optional honey to a bowl. Mix until all ingredients are thoroughly combined. Then add the protein powder in small portions, making sure to mix it in evenly. Grease up your cookie sheet AND your hands with some coconut oil (the dough is pretty sticky) and roll the dough into balls about an inch in diameter. Place them evenly on the cookie sheet. Then take a fork and press down in both directions on each cookie so that it has a checkered pattern. This will also flatten out the cookie as well. Put in the oven for 10 minutes and enjoy!
You can totally mix this recipe up and use peanut butter (or any nut butter, really) instead of almond butter. Or you could add your own toppings! Cacao nibs, raisins, more nuts, dark chocolate chips, you can be creative here.
I really like eating these protein cookies post workout. 2-3 of them are perfectly filling and a good way to reward myself after an intense sweat sesh!
I’m also obsessing over this Tone It Up protein powder, for REALZ. All the ingredients are natural and you can actually READ and understand what they are. That’s big for me. I hate using protein powders with a bunch of chemical-sounding ingredients. Not my style. HA.
The flavor is amazing too! Not too sweet or artificial tasting. Plus it’s plant based. Definitely a MUST try!
