So breakfast toast is so simple and so quick, especially for mornings where you have NO time. AKA, every single morning for me.
I mean don’t get me wrong, I love a good breakfast spread (and I love cooking a good breakfast spread) but at 6 AM, there’s barely time to brush my hair some days.
So having effortless breakfast on hand is a major key.
So yeah, I’m a huge fan of toast in the morning! But if y’all have read my post on my amped up avo toast, you know I just can’t do boring toast. Nor can I have tons of sugar/empty calories.
Unfortunately, gone are the days where I can slather a heaping spoonful of butter on my toast and then coat it in cinnamon & sugar. Who else misses THAT?!
So today, I’ve put the HH|HH spin on the traditional PB & banana toast!
I switched the peanut butter for almond butter (my favorite kind of nut butter), but I’ve added GOJI BERRY powder. Sounds weird, I know, but this super food adds the perfect amount of sweetness to the almond butter.

I also topped this superfood toast with some bee pollen, which I’m also obsessing over lately. It’s great for your immune system and it adds this earthy flavor to my morning toast.
- Whole wheat bread of choice, toasted
- Nut butter of choice, unsalted
- Goji berry powder
- Bee pollen
In a small bowl, mix together 2 parts nut butter and 1 part goji berry powder. Make sure it’s well combined so that you don’t get a chalky consistency on your toast. Spread the mixture over your toast. Add the sliced banana and sprinkle as much bee pollen as you want. I like A LOT of bee pollen but this is totally personal preference. If you make too much goji berry nut butter, you can refrigerate the rest in an air tight container!
I like to make a huge batch of the goji berry nut butter and spoon it out onto toast whenever it’s breakfast time! Or you can nix the bread and just eat a heaping spoonful on its own. I mean, less carbs right?!
You can also at the mixture to smoothies for some added healthy fats and vitamins. Basically, it’s good on anything! My personal favorite is definitely breakfast toast, though.
The combined ingredients give me a bunch of energy in the morning, so I’m ready to face the day.
