I’m really mixing it up in the kitchen right now. Trying out new recipe ideas that pop in my head, taking ideas from Pinterest (obviously), and listening to what other healthy foodies like to eat. I literally get inspiration from everywhere! Then I sort of just kind of mix it all together and hope for a good outcome. Sometimes it works, & sometimes it’s a total failure.
I’m getting pretty good at it lately. And this chickpea salad was a MAJOR win!
Plus chickpeas are full of health benefits! & when you add avocado (YAY healthy fats!) and some olive oil, you’ve got the PERFECT not-so-boring fall dish!
WHAT YOU’LL NEED:
- 2 cans of chickpeas, rinsed and drained
- 1/2 cup diced cherry tomatoes
- 1/2 cup diced cucumbers
- 1 diced avocado
- Handful of minced dill
- 1/4 cup olive oil
Mix all ingredients together and eat up! I personally think it tastes better when you let it sit overnight. Then all the ingredients have a chance to marinate and it makes for a more flavorful salad!
ORRRR a lazy Thanksgiving side dish for procrastinators, like me. LOL. Seriously, everyone will love it! Plus it seems like you put so much thought into it but really you just diced up some veggies and threw it all together.
It’s like the lazy girl’s motto for healthy cooking. Am I right?!
And remember those health benefits of chickpeas I mentioned? Good source of protein? CHECK. Vitamins & minerals? CHECK. Lots & lots of fiber? DOUBLE CHECK.
So it should come as no surprise that chickpeas are considered one of the world’s healthiest foods!
Anyway, I’m off to hit the gym for a second time today. I had some free time in my schedule so I thought…WHY NOT?
