It has been icky and rainy for the past week here in LA & it’s been putting me in a bad mood. UGH. Seriously missing the sun right now.
This smoothie bowl definitely helps with the gloominess, though! Seriously, I feel like it’s prettier than me.
I started obsessing over smoothies awhile back. Something about being able to drink your breakfast on the go AND still get a bunch of healthy stuff in your bod is just so awesome to me. I don’t know if that makes me weird or not, but I don’t care.
Smoothie bowls are so great because there is now right way to make one. You can get creative and kinda do whatever you want with it. Total freedom to express yourself through a smoothie bowl, HA.
What I love about this smoothie bowl in particular is how thick & creamy it is. The trick, I have come to learn, for thicker smoothie bowls is uncooked oatmeal. Who would have thought?! You just put a half cup in the blender and the smoothie comes out as thick as ice cream. So here’s the deal on my fav ‘I can’t believe it’s not ice cream’ smoothie bowl:
- 2 cups frozen blueberries
- 1 cup frozen strawberries
- 1/2 cup rolled oats or oat flower
- 1/2 cup unsweetened almond milk
- 3/14 cup non-fat Greek yogurt
- 1 tablespoon unsweetened shredded coconut
- 1 scoop vanilla protein powder (optional)
- 1 tablespoon flax seed
- 1 tablespoon chia seed
- Unsweetened shredded coconut
- Combine all the bowl ingredients into a blender or food processor & blend until smooth
- Poor into a bowl and top with your choice of toppings.
- Makes 2 servings
Super simple, right?! And one of the most gorgeous colored smoothie bowls I’ve ever seen. Loaded with fiber and lots of other necessary vitamins & minerals, it’s hard to believe I don’t eat/drink one every day. Oh wait, I totally do!
I make it a goal to drink a ‘super’ smoothie at some point every day. It really changes the way your body feels throughout the day. I feel more energetic in the mornings and with all this nasty weather going on here, these vitamins & minerals help boost your immune system and fight off sicknesses. I have NO time for sickness in my life.
