So, I was apparently so tired this morning that I slept through my alarm and woke up a whole hour late. Yep, it’s definitely Monday. Totally over it already and it’s still the morning. When is it time to nap?!
But okay, Thanksgiving is around the corner, people. So naturally, all I can think about is CHRISTMAS IS SO CLOSE!! But before that, I need to survive the #1 eating holiday in America and manage to get out alive and not 5lbs heavier. Challenge accepted.
So, I’ve been scouring Pinterest for any and all healthy recipes (that also taste good) that I could add to my Thanksgiving menu. And surprisingly, I had a whole lot of successes.
This recipe from Joyful Healthy Eats was definitely my fav, though! Panko/parm crusted baked asparagus fries. First of all, these “fries” are so simple to make and take very little time to prepare. It also makes a vegetable NOT taste like a vegetable. So, if you have a love/hate relationship with vegetables like I do, this recipe is definitely for you. AND it’s low carb, guiltless (even if you eat half of the batch in one sitting like I did…whoops), and full of nutrients!
Definitely a crowd pleaser and my family can attest to that considering we ate the entire batch before the rest of our dinner was done cooking.
With only a few ingredients, these fries are also pretty cheap to make! It cost me about $10 to make enough to feed an entire family. Okay… so what if I ate half of it?! Technically it really could feed an entire family.
WHAT YOU’LL NEED
- 2 lb.s of asparagus spears
- 1 cup of panko
- ⅓ cup of parmesan
- ½ teaspoon of dry basil
- 3 eggs, beaten
The only change I made to this original recipe is I cut off the white ends of the asparagus because that part looks ugly and it scares me. Irrational. Honestly, there’s no harm in leaving that part attached but I’m high maintenance and a perfectionist and cutting it off makes for a prettier end product, in my opinion.
- Preheat oven to 400.
- In a small bowl mix panko, parmesan, and dry basil.
- In another small bowl, lightly beat egg whites.
- Cut the white tips off of the asparagus.
- Dunk the Asparagus spears in beaten eggs white first then in the panko mixture.
- Place on baking sheet and sprinkle the remaining panko mixture on the top.
- Bake for 20 minutes.
- Eat all of em’!!
SO easy and have I mentioned that THEY’RE SO GOOD?!?! The all caps might be a little dramatic but I just need to stress that I hit the jackpot with this recipe. You can pair it with basically any entrée or it just makes a perfect healthy snack when your craving something crunchy and savory.
