I literally can’t contain the excitement I have to share this recipe with you babes!
And this one is a good one so be ready to sprint to your nearest grocery store or farmer’s market. You won’t be able to resist, seriously.
So my relationship with salads is…well…COMPLICATED.
I have been a perpetual-salad-hater my entire life. It wasn’t until I discovered how ranch dressing can transform lettuce into creamy goodness that I started tolerating salads.
Not ideal if we’re trying to be healthy, which I am NOW. Back then? Not so much.
So I started experimenting with different types of salads. Because just a bunch of leaves wasn’t cutting it anymore. For awhile, my personal fav was the HH|HH chickpea salad. I pretty much lived off that for months.
But my new obsession is WATERMELON SALAD. This isn’t your regular fruit salad, OH no. There are a lot of flavors going on here.
- 1 1/2 cups of cubed watermelon
- 1 cup of black berries
- Handful of crumbled feta cheese
- 3-4 torn mint leaves
+ This watermelon salad pretty simple. So I’ll make it quick. Chop up the watermelon to your desired size. I like mine to be a bit more chunky but do what feels right for you. Add in your black berries and crumble on the feta cheese. Then tear your mint leaves into pieces (the size of the mint pieces is personal preference, again) and add it to the bowl. Mix it up with your hands or a wooden spoon and place in the fridge for 2-8 hours before eating it, that way all the flavors mesh together and the mint is absorbed in the watermelon. YUM.
You could even make this salad into cute little skewers for a party app! Kind of like my cucumber skewers. There’s really no way you can go wrong. Flavors are ON POINT.
Plus it’s healthy and full of nutrients. Guilt free but with TASTE. How perfect?
Definitely not your normal, boring salad! Watermelon salad allll the way.
